Pecan Kuih Kapit with Soy Sauce
The humble soy sauce is a staple at the heart of many asian kitchens. This rendition of the kuih kapit was kindled by the passions of a third-gen Malaysian soy sauce brewer who still ages soy sauce in vats under the sun.
Our process begins with gently roasting pecans on low heat for a naturally rich flavour to develop. Together with a dash of hand-brewed soy sauce, the nuts are then crushed into a smooth butter which in turn is encased within what is known as kuih kapit, or love letters, a traditional Malay/Peranakan confection we describe as coconuty crispy wafers.
